Fun Sunshine Cookies
Since these cookies have orange in them, they’re healthy, right? At least that’s what my kids try to tell me! No matter what you need to tell yourself about making these cookies, just make them up and gobble them down. They’re really, really good and we’ve actually had these for breakfast/brunch with hot coffee for me and tea for the kids.
They do great if you decide to freeze them for later, too! (and the homemade icing is so good as well!)
Orange Juice Sunshine Cookies
Ingredients in Orange Juice Cookies
- 2 C cake flour
- 1 1/2 TSP baking powder
- 1/4 TSP salt
- 1/2 C unsalted butter, softened
- 3/4 C granulated sugar
- 1 egg white
- 1 1/2 TBSP heavy cream
- 1 1/2 TSP vanilla extract
- Zest of two oranges
Orange Icing:
- 2 C powdered sugar
- 3-4 TBSP of milk
- Zest of one orange
How to make these Orange Juice Cookies
Preheat oven to 350 degrees
In a medium bowl, whisk together flour, baking powder, and salt; set aside
Using a stand mixer, beat together butter, sugar, and orange zest until pale and fluffy, about 3 minutes
Add the egg white, heavy cream, and vanilla, and beat until combined
Reduce speed to low and add flour mixture in three scoops, mixing until incorporated, scraping down the bowl as needed
Working with 1 heaping tablespoon of dough at a time, roll into balls and space 2 inches apart on the prepared baking sheets
Using your hands, press down the tops of the balls slightly
Bake until the cookies are just beginning to brown around the edges, 8 to 10 minutes, rotating the sheet halfway through baking
Let the cookies cool completely on the baking sheet
While the cookies bake, grab a medium bowl and hand whisk and mix the icing ingredients until combined
Pour icing over top the cookies and allow icing to harden
Serve and enjoy!
