Okay, who’s feeling lucky?! I made these St. Patrick’s Day Shamrock Whoopie Pies and they’re even better than a pot of gold.

Well, to me they are!
These delicious treats are easy to whip up. All it takes is a four-leaf clover cookie cutter and you’ve got yourself the cutest whoopie pies out there!

Do you ever throw St. Patrick’s Day parties? These St. Patrick’s Day Whoopie Pies are the perfect addition to any sweet table. Not to mention, the assembly process is perfect to complete with kids. All it takes is spreading some buttercream and sandwiching pieces of cake together! Definitely a fun and yummy party recipe.

What You Need to Make This Shamrock Whoopie Pies Recipe
Ingredients needed for the green cake
- Vanilla cake mix + all the ingredients to make it
- 1 tbsp cocoa powder
- ¼ tsp Kelly green gel food coloring
Ingredients for the buttercream filling
- ½ stick butter, softened
- 1 cup icing sugar
- 2-3 tbsp milk
Tools you need
- Rectangular pan (13 x 9)
- Parchment paper
- Four leaf clover cookie cutter
Yields: 6 to 8 whoopie pies

How to Make Shamrock Whoopie Pies for St. Patrick’s Day
First, line your baking sheet with parchment paper and preheat your oven according to the cake mix’s directions.
Next, start mixing your cake mix and its ingredients. Once the cake batter has formed, add cocoa powder and mix until completely incorporated. Then add the gel food coloring and mix until tinted.

Once your cake mixc is ready, use a spatula and spread your cake batter onto your lined baking sheet. Then, bake according to the box’s directions.
While the cake is baking you can start making the buttercream. Begin by beating together the butter, sugar and milk on medium speed. Gradually increase the speed to high.
Once the ingredients are combined and form semi-stiff peaks, scoop into a piping bag.

Once the cake is finished baking, remove it from oven and allow to cool. Then, using your cookie cutter, cut out 4-leaf clover shapes and save the scraps for snacking!

Flip over each shaped cake (they look better from the underside and are easier to frost this way).

Frost half of your shaped cakes and then sandwich with another unfrosted piece.

Serve and enjoy!
