Garlic Parmesan Bacon Potatoes Easy Recipe
3 lb Yukon Potatoes
12 oz Bacon
2 tbsp Butter
2 tbsp minced Garlic
1/4 cup Parmesan Cheese
1/4 cup chopped fresh Parsley
1/4 cup sliced Green Onion
Salt & Pepper to taste
Preheat oven to 400 degrees.
Start by slicing potatoes in half lengthwise and place in water and boil for 12 minutes. After the 12 minutes, drain the potatoes and set them aside. Next slice the bacon into 1″ pieces and fry until cooked but not crispy, then allow the bacon to drain into a bowl or cup so that you can keep the bacon grease.
Once the potatoes are cut and the bacon is cooked. Add 2 tablespoons of bacon grease and butter to a large pan and heat over medium temperature. Once heated add garlic, parsley, salt, and pepper to the pan and mix well. Then add the potatoes to the pan and toss to coat well.
Next, transfer the potatoes to a baking sheet so that they are laying with the cut side down, and sprinkle the bacon pieces over the potatoes.
Cook for 30 minutes or until cut side begins to brown, then flip the potatoes and cook for another 15 minutes.
Remove from the oven, and garnish with sliced green onions.
That’s all, not to bad for a delicious loaded potato recipe. This is a must try I promise you. I also serve mine with sour cream on the side, because I think potatoes and sour cream go hand in hand. Another great side dish I like to make with these is a baked pineapple because it helps me digest all the carbs.
