Margarita Cookies Recipe with Tequila Glaze for Cinco De Mayo

Cinco De Mayo Margarita Cookies Recipe

Are you ready to celebrate Cinco De Mayo?  I sure am!  You will find me on the beach with a margarita in one hand and one of these Margarita Cookies in your other hand! 

Tequila Lime Margarita Cookies

Ingredients needed to make Margarita cookies

1 cup of unsalted sweet cream butter softened
1¾ cup of sugar
1 egg
1 tablespoon of Jose Cuervo Tequila
2 teaspoons of lime juice
2 teaspoons of lime zest
1 teaspoon of baking soda
½ a teaspoon of baking powder
½ a teaspoon of salt
3 cups of four
1-3 drops of green food coloring

Tequila Frosting Ingredients

1 cup of unsalted sweet cream butter softened
2-4 tablespoons of heavy whipping cream
2 tablespoons of Jose Cuervo Tequila
1 lime, zested
1 piping bag with a medium star tip

Lime Glaze Ingredients

1 cup of powder sugar
1 tablespoon of milk
1 tablespoon of tequila
1 tablespoon of lime zest
1 disposable piping bag

 

How to Make These Easy Margarita Cookies

First, preheat oven to 350 degrees.

Next, using a medium bowl whisk together salt, baking soda, flour, baking powder, and lime zest.  Then using a standing mixer cream together the butter and sugar until light and fluffy.  Next mix in the egg, lime juice, and tequila.

Then gradually mix in the flour mixture, a cup at a time, and stop once combined and mix in the food coloring.

Once the dough is fully mixed, roll balls of cookie dough using about 2 tbsp of dough each.  Then place the balls onto the baking sheet 2 inches apart.

Bake the cookies for 13-15 minutes and the bottoms are just barely browned.

 

Next prepare the tequila frosting

Using a standing mixer, combine all ingredients and mix on medium speed until stiff with creamy peaks, then scoop

the frosting into a piping bag and set aside.

 

Prepare the lime glaze

To prepare the glaze, combine all the ingredients in a medium bowl, and mix until smooth then scoop it into the disposable piping bag and set aside.

 

Once everything is baked and prepped it is time to build the margarita cookies.

Start by placing the cookies onto a wire rack over a cookie sheet and pair up the cookies to their size partner on the wire rack.

Next, pipe a dollop of frosting onto the bottom cookie and place the top cookie on top of the frosting and lightly push down. 

Next drizzle the glaze over the cookies and let dry for 30 minutes before enjoying!

Margarita Cookies

Margarita Cookies with Lime Zest and Tequila

Ingredients

Margarita cookies

  • 1 C unsalted sweet cream butter softened

  • 2 tsp lime juice
  • 2 tsp lime zest
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 3 C four
  • 1-3 drops of green food coloring

Frosting

  • 1 C unsalted sweet cream butter softened
  • 2-4 tbsp heavy whipping cream
  • 2 tbsp Jose Cuervo Tequila
  • 1 lime, zested
  • 1 piping bag with a medium star tip

Lime Glaze

  • 1 C powder sugar

  • 1 tbsp tequila
  • 1 tbsp lime zest
  • 1 disposable piping bag

Instructions

  7. Roll 2 tbsp of cookie dough into a ball and place onto the baking sheet, keeping them 2 inches apart
  8. Bake for 13-15 minutes or until just barely browned on the bottom

Tequila Frosting

  1. Using a standing mixer, combine all ingredients and mix on medium speed until stiff with creamy peaks
  2. Scoop into the piping bag and set aside

Lime Glaze

  1. In a medium bowl, combine all ingredients and mix until smooth
  2. Scoop into the disposable piping bag
  3. Set aside

Directions to set up

  1. Place cookies onto a wire rack over a cookie sheet
  2. Pair up the cookies to their size partner on the wire rack
  3. Using the bottom cookie, pipe a dollop of frosting
  4. Place the top cookie on top of the frosting and lightly push down
  5. Place the glaze into a piping bag and cut the tip off
  6. Drizzle over cookies and let dry for 30 minutes before enjoying!
