Chocolate Covered Peanut Butter

These Chocolate Covered Peanut Butter Graham Sandwiches will stop you in your tracks. Try saying no to this tasty treats…you can’t!
If you’ve ever been to Disney World, then you know the treats that I’m referring to, right? Those chocolate covered squares that fit perfectly in your hand so you can carry it around the park to still be exploring everything it has to offer.
Last time we visited Disney, I fell in love with those treats and I knew I had to find a way to make them at home. Luckily, I did and these Chocolate Covered Peanut Butter Graham Sandwiches are amazing, easy, and finger-licking good.
I love to make them as fun treats and put them in school lunch boxes or even have them waiting as a surprise when the kiddos arrive home from school. And from the looks on their face when they walk through the door, it’s a surprise that they absolutely love!
There’s no denying the fact that the dynamic duo of chocolate and peanut butter are truly out of this world. While this recipe makes quite the large batch, it’s a good idea to go ahead and double it (maybe even triple it!) because they will disappear quickly!
12 Graham Crackers
1/2 cup Peanut Butter
1/2 cup Powdered Sugar
1 tsp Vanilla
12 oz Chocolate Melting Candy
Line a cookie sheet with parchment paper.
Melt chocolate by microwaving for 45 seconds, stirring and repeating until melted and smooth.
spread a thin layer of chocolate on 8 of the graham crackers and place on prepared sheet.
Place in freezer for 5 minutes.
Finely crush 4 of the graham crackers.
Combine peanut butter, powdered sugar, crushed graham crackers and vanilla.
Place a 1″ ball of peanut butter mixture on top of chocolate side of the each graham crackers and gently press and spread evenly to the edges.
Return to freezer for 10 minutes to firm up.
Reheat the chocolate if necessary.
Place crackers into chocolate and spoon the chocolate over the top.
Lift out with a fork and tap the fork on the side of the bowl to shake off excess chocolate.
Return to pan, then return pan to freezer for 5 minutes.
Place a small amount of melted chocolate in a sandwich bag and clip very tiny end of a corner and drizzle over each sandwich.
