Cadbury Creme Egg Cupcakes Recipe

up to 24 cupcakes)
1 box of chocolate cake mix 
(plus ingredients called for on the box, i.e. eggs,
oil & water)
1 cup unsalted butter, softened
3 teaspoons of vanilla extract
4 cups confectioners’ sugar
4 tablespoons milk
Cadbury Crème Eggs (1 per cupcake)
 Food coloring (optional)

Prepare cake batter according to box instructions
Fill cupcake liners 1/3 full and place a Cadbury Egg (thick side first) down inside the batter.
 Bake cupcakes according to box instructions. Allow to cool in pan for 15 minutes before frosting.
To make frosting: use an electric mixer to beat butter until light and fluffy.  
Gradually beat in confectioners’ sugar until fully incorporated. 
Beat in vanilla frosting. 
Pour in milk and beat for an additional 3 minutes. 


Add food coloring (optional) to create desired color.
Wa-la… Sweet Deliciousness!

Caramel Apple Recipe Fun with the Kids

We had 2 huge bags full of apples from our apple picking trip so one of the ways the kids asked to use them was to make caramel apples. This is a new tradition for us, we always make apple crisp and pies but for some reason we haven’t made caramel apples before.  I was excited to try though and wanted to make it a really fun activity for the kids. 

For dipping we had:
Caramel (I melted Vanilla Caramel candy squares)
White Chocolate
Purple Chocolate
Orange Chocolate
Crushed Pretzels
Candy Corn
Halloween Themed Sprinkles
Crushed Butterfingers
 The kids had a blast dunking the apples in everything and getting as sticky as possible.  They didn’t want to stop but eventually we ran out of caramel.  We put them in the fridge to harden and I could hear little hands checking on them every few minutes.
They turned out so yummy and the kids were all so proud of their creations!
This is definitely an activity we’ll be repeating next year!

When my husband first came home with some pizza crust, cheese and bunch of fruit, I was baffled and admittedly turned my nose up to the thought of a “sweet” pizza.  However he pushed for me to just try it, and now I love them!  Its super easy, the kids clan their plates without a fuss, and its perfect for my sweet tooth!

Pizza crust; I use a Pillsbury roll, its easy and tastes great
Sweetened Condensed Milk
Shredded Cheese; I use mozzarella, my husbands used a few different types, depends on what you like
Fruit of Choice; my favorite is bananas and strawberries or apples and raisins
 Grease Pizza Pan and Layout Crust
 Add a Swirl of the Condensed Milk
 and Spread it Out
 Next Chop up your Fruit of Choice and Spread it Around
 Sprinkle Some Cinnamon on top of the Fruit
 Next add the Cheese like a Normal Pizza
 Sprinkle a bit more cinnamon on top
 Cook at 400 degrees, The time will depend on your crust choice.  This pizza took 25 minutes to cook
The pizza is done when the crust and some of the cheese is a Golden Color
 Let it sit for 5 to 10 minutes
 Then DIG IN!

My absolute favorite part of Fall is Apple Picking and my fave dessert is apple crisp… so they go hand in hand and the apple picking gives me the perfect excuse to make it every other night till the bag is empty!

Here is my Easy Apple Crisp Recipe…
7 Apples
4 teaspoons Lemon Juice
1/2 Teaspoon Vanilla
2 cups Brown Sugar
1 teaspoon Cinnamon
2 cups Quaker Oats
1 cup softened Butter
Easy Apple Crisp Recipe with Oats
Preheat oven to 375 degrees
peel apples and slice to your desired size, I usually make small cube like pieces.
Combine the apples, lemon juice, and vanilla in the bottom of a casserole dish
In a medium sized mixing bowl combine brown sugar, cinnamon, Quaker oats, and butter
Then spread it on top of the apples in the casserole dish
Place in the oven and cook for 45 minutes
