I love my coffee, in all forms!  As the warmer weather of spring is nearing, I am dreaming of sipping my favorite iced coffee concoctions outside in the warm sun.
I know I may be getting ahead of myself, it’s only the end of February and in New England, that’s still the middle of winter.  Yet I have that summer itch, so for now I’ll make myself a cup of icy deliciousness and turn the heat up extra high while I dream of warmer weather.

This recipe works out perfectly for me on days like today when its yucky and cold out so I really don’t want to pack the kids in the van for a drive-thru run.
However I always have coffee in the house!  So this recipe lets me indulge even on the days this mommy cant escape the house.
Mocha Coffee Drink Recipe

INGREDIENTS
3/4 cup Espresso Coffee
1/4 cup Sugar
1 cup Milk
1/2 cup Dark Chocolate Syrup
pinch Xantham Gum
4 cup Ice
Whipped Cream for topping
Drizzle Chocolate Syrup for toppingMake coffee according to directions.
While still hot, pour into blender
Add sugar and mix until dissolved.

Add milk, chocolate syrup and xantham gum and mix another minute.

Place in refrigerator for 30 minutes to cool.

Add ice to blender and blend on high until smooth.

Pour into glasses.
Top each glass with whipped cream.
